The word that matters is ticketed. A quote, a screenshot or a PDF you assembled yourself contains the same information, but none of it exists in an airline reservation system. A ticketed itinerary carries a PNR — a six-character Passenger Name Record — that a check-in agent can type into their terminal and see returned.
Itinerary vs. a paid ticket
They are not the same thing. A paid ticket is a completed purchase. A ticketed itinerary is a real reservation held under a PNR for a limited period. It verifies as genuine without you paying the full fare, which is the entire point of it as a travel document.
Where it is asked for
Two places, for two different reasons. Airlines ask at check-in because they carry the financial risk if you are refused entry. Immigration may ask on arrival to confirm you intend to leave.
